Today its nothing special for me, but a "Brownie" made it special.. I love baking very much.. even though I don't have an OTG or Convection oven, I always try baking with whatever stuff I have.. I have turned an old pressure cooker to an OTG ;) yes it works perfect for me.
When somebody visits your home and when you offer them a brownie, most of them ask, "is it a cake!!?" ha ha.. yea it happens because it looks like cake but its NOT! Brownie has a consistency between a cake and a cookie..lesser calorie when compared to complete dressed cake ;)
I have baked a "Chocolate Walnut Brownie" today and its EGGLESS!!. My husband's favorite dessert (only if it come out well). A warm brownie with vanilla ice cream tastes heavenly.. For today's brownie my hubby gave me a big thumbs up and that makes a perfect recipe for me..and after baking something perfect I cannot let it finish without capturing it for sure.. So here are the pics of "Chocolate Walnut Brownie" which I have captured through my lens..
I have referred "Rak's Kitchen" for the recipe in which she said she has referred "Gayatri's cook spot". Gayatri's cook spot is an amazing blog for beginners as well as experts..especially in baking. She has explained everything so well.. I have mentioned the recipe at the end of post .. :)

Recipe taken from "Rak's Kitchen"
Recipe:
All purpose flour – 1 cup + (2 tblsp & 2 tsp)
Coco powder unsweetened – 1/3 cup
Sugar – 1 cup (I used 3/4 sugar)
Instant coffee – 1/2 tsp
Baking powder – 1 & 1/4 tsp
Butter – 1/4 cup
Salt – 1/4 tsp
Walnuts chopped - 1/4 cup
Method:
Preheat the oven/pressure cooker for about 10 mins at 180 degree, for cooker medium flame. Keep the baking tin ready by greasing it with oil/ butter and dust with flour. Heat a heavy bottomed pan, mix 2 tbsp+ 2 tsp flour with half cup of water and stir well until it turns to a thick paste. Remove it to another bowl and let it cool.. In the same pan heat butter and melt it. Remove it from flame then add coco powder to it and mix it well. Add coffee and mix it well again. Add sugar to flour paste and mix it well followed by the coco butter mixture mix altogether well. Then to this add flour, baking powder, salt and fold it well. Add walnuts and fold well (toss into some flour before adding). Transfer it to baking tin and bake it for about 25 mins. Until toothpick inserted comes out clean and its done.. Serve hot brownie with vanilla ice cream and enjoy!!
